natural winemaking
We have been making our wines at Tank Farm, a refurbished auto shop turned winery, since 2019. We believe in making simple wines, and believe that even simple wines can be great wines. With that, a simple space is all we need. Insulation, a single drain, and a temperature controlled cellar to age our wines. We collect old, but quality, equipment. A 1988 4 ton Euro press for our white wines, a 2 ton wooden basket press for our red wines, 1-1.5 ton fermentation bins, a used forklift and a small pump, is all we need.
All of the grapes we use to make our wines are most importantly, always farmed organic at minimum, with the majority of our fruit being farmed by us, as certified Demeter biodynamic. We always hand harvest, believe the best sorting is done in the vineyard, and always rely on native yeast and bacteria to steer our fermentations. We do not add anything to the wine to adjust the chemistry, acid, or nutrients, relying on the vineyard vitality to provide what we need.
We believe less is more, purity and transparency in the wine is what we value, which is at the foundation of exploring what terroir has to offer. All the wines we produce see a minimal amount of sulfur before bottling that is based on the wines natural pH to retain freshness, energy and longevity. This helps us take a snapshot of the wine’s phase of life as it transcends through its journey of aging and evolving.
All of our white wines are barrel fermented and aged on lees, in old french oak barrels. We have embraced a solera system for our white wines - a quiet, evolving conversation between vintages and the passage of time. Our red wines age on fine lees, collected from the basket press, and all the wines are racked only once to prepare for bottling.
We bottle our wines in the absence of fining or filtration. We choose to bottle our wines in light weight highly recyclable green glass, with natural cork, and without capsules to minimize our carbon footprint. Our label designs are created by us, a reflection of our inspirations and muses.
Each new harvest season, we find space to continue our self evolution and expand our creative efforts in our winemaking regime while maintaining our dogmatic, transparent approach. The wines we produce are a compilation of many intentions, things we love, layered through our winemaking experiences each year that we learn from.
